Ingredients (Serves 2–3)
- 1½ lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp paprika
- Salt and pepper, to taste
- 4 cups mixed greens (chopped spinach & kale)
- Optional: 2 tbsp of nutritional yeast sprinkled on top
Instructions
- Season the chicken:Pat dry and season with salt, pepper, oregano, thyme, and paprika.
- Sear:Heat olive oil in a large skillet over medium heat. Add chicken and cook 5–6 minutes per side until golden and cooked through. Remove from pan and set aside.
- Build flavor:In the same skillet, add garlic and cook for 30 seconds. Add lemon juice and zest, scraping the pan to release flavor.
- Add greens:Stir in greens and cook until just wilted (2–3 minutes).
- Finish:Return chicken to the pan, toss gently, and top with nutritional yeast if using.
