Zesty Lemon Herb Chicken

Ingredients (Serves 2–3)

  • 1½ lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 4 cups mixed greens (chopped spinach & kale)
  • Optional: 2 tbsp of nutritional yeast sprinkled on top

Instructions

  1. Season the chicken:Pat dry and season with salt, pepper, oregano, thyme, and paprika.
  2. Sear:Heat olive oil in a large skillet over medium heat. Add chicken and cook 5–6 minutes per side until golden and cooked through. Remove from pan and set aside.
  3. Build flavor:In the same skillet, add garlic and cook for 30 seconds. Add lemon juice and zest, scraping the pan to release flavor.
  4. Add greens:Stir in greens and cook until just wilted (2–3 minutes).
  5. Finish:Return chicken to the pan, toss gently, and top with nutritional yeast if using.
